Wear non-latex disposable gloves, spray a little pam on them... and your hands will not get sticky and the MMF (marshmallow fondant) will not stick to your gloves.
I made MMF for the first time today, it's just like making bread dough. It was pretty easy. To help keep it from sticking to my countertop, I sprayed the counter top with Pam, and then sprinkled a little powdered sugar on top of it. It worked great, and I used my non-latex disposable gloves (like the ones you see in first aid kits or at the doctors office, got mine at walmart- next to the band-aids), and I did not have any stick"y" problems.
