Refridgerate Cream Cheese Frosting?

Ok so I figure that it needs to be refridgerated, but how long could it last sitting out. I'm thinking of making a carrot cake with a cream cheese frosting for my wedding coming up in Sept. Yeah! Just wanted to make sure it would be ok sitting out for a couple of hours and if left overs would be ok to keep.

Also do you think a carrot cake with the cream cheese frosting covered in fondant would be ok? I like the look of the fondant but want the cake to not only look great but tast great.

I think it would be fine to be out for a couple of hours. I have done it several times with no ill effects. Plus, I think as long as you refrigerate as soon as possible, the leftovers will be fine also.

I am sure you can cover it with fondant without a problem as long as you don't put nuts in the icing.
