Hi all,

Just wondering how far in advance I can dip strawberries? 2 days? I'm doing about 200. Also, is storing them in the fridge okay after they are dipped? I'm just worried that the chocolate will sweat.

2 days is way too far in advance. you can dip 200 in a couple of hours.

I just did a few last weekend, I dipped them on Friday, stored in the refrigerator until saturday morning, and delivered them that Saturday afternoon and they didn't sweat very much at all. HTH!
I also have a very large order (250) to do in a few weeks, and I am not quite sure how much to charge for that large quantity. any suggestions?

I'll be dipping mine in Callebaut and Lindt chocolate (dark, milk and white) and then rolling them in nuts (pecans and walnuts), mini choc chips, or fresh grated coconut.

I charged $30/dozen.

My order is for a 3 day event so I figured I could dip them all the night before delivery.

yummy...they sound good. Mine are for a wedding, and they will be dipped in dark choc, and white choc. (Tuxedos and Brides). Thanks for the advice on how much to charge.
