Hi all,

I am making a cake for someone and they requested that I incorporate some type of Panda Bear figurine into the cake.

At first I thought about making a gumpaste panda, but realized I didn't have a clue how. So I searched for molds and didn't come up with anything.

I did find a silicone Wilton teddy bear mold (4 inches I think) that I purchased. I figured I could make a teddy bear cookie an then ice it to look like a panda.

Is there a certain cookie recipe I should use? Do you think it would be ok for me to use a sugar or cream cheese sugar cookie recipe or will these be to soft? Maybe a chocolate chip cookie recipe w/out the choc. chips?

Is there anything special I would have to do to the mold? Smear with crisco and dust with flour? Or could I just smear the dough into the mold?

Should I leave out the levening agents in the recipe? So that the cookie doesn't rise up out of the mold? Or would it be better to let it rise and the trim off the excess once the cookie is baked? Should I trim while it's warm or wait until it's cooled off?

I have never used a mold but I'll give you a bump to see if anyone else can help.
