Cookie Thickness

I am wanting to start making and decorating cookies.....but I have a question about the decorating.

I really like the "Cookie Bouquet" idea, but how thick do I roll out the dough to get that perfect thickness?

I like a thicker cookie, so that it doesn't get "crunchy."

Can anybody help?

I bought some dowel rods at Michaels (actually for another project, but I had some leftover). They are 5/16" thick and I use them as a guide for my rolling pin. I then bought some square dowel rods at Home Depot that are 1/4" thick, which would have worked great, but one of them was kind of warped so my rolling pin didn't roll properly.

There is a product out there called a Do'bord or something like that, but it's expensive and the dowel rods pretty much do the same thing. I roll the dough out between 2 sheets of parchment paper as well, so there's no mess.

for a little over $5 at bed bath and beyond or linen n things you can get rolling pin rings. I love mine, i use the biscuit size (its the biggest set in the bunch) and it is the perfect size for bouquets

I roll them about 3/8 to 1/2 inch thick for cookie bouquets

I roll my dough out slightly thicker than the cookie pop sticks.

Also, I think it depends on the recipe you use, plus your oven temperture that determines how crunch a cookie will be. My cookies are thinner than most cookie's posted on here but my clients say they melt in their mouths.

I did the same thing as golfgirl.....bought square dowel rods at the craft store. I have 1/4" for regular cookies (not bouquets) and 1/2" for the cookie bouquets. Worked great for me.
