I made a batch of royal icing thinking I would have some time to make some flowers for future use. I know it can be kept for a couple weeks in an airtight container non-refridgerated- and it's been 2 weeks already. I don't have the time to make some flowers anytime soon. Can it be frozen for future use? If so, for how long? I hate to throw anything away if I don't have to. Any help would be appreciated. Thanks. icon_smile.gif

I'm not sure if it would freeze well or not.
Make a test run, freeze a small portion of it overnight. In the morning let it defrosts and see what happens. If it separates, try mixing it back up and see if it comes back ok. This way you don't waste a whole batch of royal icing...but hopefully you won't have to waste it either way.

I think though that since you're already at the 2 week mark, you might go ahead and try freezing it rather than just throwing it out.

Yes, you can freeze royal icing!!! I do it!! I freeze everything I can!!!!

I pick a day that I have time to make royal icing flowers & do nothing else. I make several different colors of all of them. Let them dry for a day or two then I put them in a tupperware container then a ziploc bag. They work fine!!!! I just did a bridal shower cake last weekend & I used the flowers I froze from Jan 10. They were still pretty, still fresh, & still eatable!!!! (if that's the way to spell that, LOL)
They will last for months!

You can also store them in a ziploc bag & put in a cabinet. They need to be out of the sunlight because they will fade in color. You can store them as long as you need to. What I do is taste & smell them before I use them. If they have a freezer smell or taste stale then I toss them. They will last for months too!! !

SO TAKE IT FROM ME IT WORKS!!!!!!

P.S..... I forgot to add that the royal icing I use is the one from the Wilton classes. Just meringue powder, powdered sugar & water.

It doesn't have a grainy taste either. You only put them in the freezer after they have hardened. Don't put them in the refrigerator because they will get moist & dissolve.

I'll give it a try - Mouse and Lisa - thanks for your effort . Like you said - I've got nothing to lose anyway since it's been 2 weeks already. I'll let you know if it works (when I finally get some time to make some flowers - spring time is so busy).
Tcturtleshell - Sorry I wasn't more clear. I'm questioning whether royal icing can be frozen before making any flowers. Any info on that would be much appreciated as well. icon_smile.gif
