Has anyone ever ganached a cheesecake? Are there any tricks to this? I have never ganached before!

I haven't ganached cheesecake but that sounds yummy!
Tips that I've heard, place your item to be ganached on a board the same size as the item to be ganached, then place that onto a cooling rack, and place the whole thing into a cookie sheet (with walls) or a jelly roll pan, that was none of the ganache goes to waste.
Hope this helps!

I have seen this done on the top. Keep it in the springform pan and pour your ganache, chill and then unmold. Boy, won't that be so good on a mocha cheesecake, mmmmmmmm
