I'm So Confused. Ice Before Cake Thaws Or After?

I'm so confused. I read on some places the you shoul freeze and completely thaw the cake before icing it. The I read that some have had verfy successfully Iced the cake while is still frozen.

icon_confused.gif Confused, confused, confused. Can some one help me understand what are the benefits/or not of each method.

I'm not sure. I only tried freezing a cake once. I iced it, then froze. BAD IDEA!!!!! As the cake thawed, the icing slid right off the cake! I had to scrape it all off, and re-ice.
So, maybe that means you should thaw, then ice?
Anyways, maybe someone else will know.

I always ice the cake once it's thawed. I had some problems with bubbles forming under the icing otherwise. So much will depend on the type of icing you use. But really, it doesn't take all that long for the cake to thaw.

The only time I tried to ice a frozen cake, was horrible. The frosting never set right and then it would crack. I did not have good luck with that idea!

i would suggest that you thaw it before you ice it. i have iced cakes when they were some what thawed...not fully thawed and i didnt have a problem with icing coming off. the icing got cold fast and was a bit more difficult to spread.

Me too! It cracked liked stained glass! Agree with above post .... it only takes an hour or two to thaw.

I too would like to know. I tried freezing a cake, then thawed, but the bottom of the cake (touching the cake board) was a little mushy from it being frozen and now thawed (hope this makes sense). Does this happen to anyone else? What am I doing wrong?

I don't thaw it on a cardboard ... the cake is wrapped in saran and I thaw it in the saran.

As with most questions- you will get many different answers with this one. icon_smile.gif Some things work for some people and other things work for other people. Reading the other replies to this thread, it would seem like some of you have had bad experiences with icing a frozen cake. I haven't had a problem icing a frozen cake yet (granted I'm not a professional) and personally I love to ice it while frozen - less crumbs that way. I haven't had any problems with slippage, bubbling, or cracking. This sounds like one of those issues where you just have to try different ways and see which one you like the best and go with that one. thumbs_up.gif
