I have the same problem when it come to full sheet cakes. Here is what I do...
I will fill, frost and decorate the day of the event. Also what kind of whiped icing are you using?
I use pastry pride it's a non dariy whip and can be out of the fridge for a few hours.
I hope this helps. Please let me know.

push comes to shove, place in front of AC unit for the night. Or if you are where its still cold at night (like i am) place in box and put in the trunk of the car overnight.

Hi Gloria2005! Sometimes local churches or even elementary schools or colleges and even a friend who has a refrigerator large enough for the sheet cake and would not mind if you can either rent a space or simply just use it for the occasion. I had to do a sheet for a graduation event and what I did was that I put in the top part of refrigerator and the other part in second shelve of refrigerator and day of the event fill and frost and decorate it. The other items in frige, I put them in a large cooler or freezer only until the cake was done and ready to go. I then put items back into frige and out of freezer back to frige. icon_smile.gif
