Filling Help Needed:)

I was wondering, and I apologize if this has been asked a thousand times but, can I use fresh strawberries as a filling? I want to layer them with bavarian cream filling. I am not sure how long they will last without getting mushy and going bad. Any tips?? *The Rookie*

Hi! This is one of my husband's favorite combinations! I make a home-made Bavarian Cream and add strawberries. Rinse them with hot water to get off the "hairs"...then rinse with cold water. Pat them dry. I cut them and blot them between paper towels to remove excess moisture...sprinkle them on and enjoy! Be sure to use your decorator's bag with coupler only to make a dam of frosting to hold the Bavarian Cream and strawberries. If you make the filling too thick, the sides have potential to bulge with the weight of the top layer. Also, be sure to refrigerate if you are using a home-made Bavarian Cream (instead of the pre-fab icon_wink.gif ).
