Does the ratio of chocolate to cream change when you are using milk chocolate? I have used dark before, and I know that it does change when you are using white, so I assume that it does change for milk. I am planning on whipping it and using it as a filling and border for a 12x18 sheet cake, so if someone could share a recipe, I would really appreciate it!

Thanks! icon_biggrin.gif

Just use a little less cream. If your recipe calls for 8oz of heavy whipping cream just use 6 or 7. Unless you are making truffles, it will be fine. Ganache is very forgiving and should whip up just fine.
