I have a request for a cake covered with chocolate fondant. I've searched the forums and can't find a recipe for it. Would you substitute cocoa powder for some of the powdered sugar in the MMF recipe? I also thought about adding some chocolate flavoring. Has anybody tried this, or does anybody have a specific recipe? I need to make this tomorrow, help!

add 1 ounce melted semi-sweet or bittersweet chocolate
1 tablespoon cocoa powder, Dutch-process or natural (Natural will give a more pronounced flavor)

or 2 ounces of white chocolate melted

to your regular marshmallow fondant recipe. I add the melted chocolate to the soupy mixture before adding the powdered sugar. The cocoa powder gets sifted in with the powder sugar.

I need to make black fondant. Do you think starting with chocolate will make it easier? I am cutting out #'s and stars and putting them on wire so it won't get eaten.

That is always what I have heard; to get black, start with chocolate. It is definitely easier; and you will use less black.

Hey there girl..
Whenever I need black fondant, I use just the black wilton coloring.. It colors with no problems and it gets really black!!!! It may save you an extra step and less ingredients. I have a pic of a red hat w/a black bow in my pics if you want to see how black it got the mmf.

How much black did you have to add? I usually make the smaller recipe of mmf not the big one?

not too much if I remember correctly. I use a toothpick to get the coloring out and knead it in and if it dosen't look like enough then I add some more. I would say it all depended on how much fondant you needed. and it'll get darker overnight.

I usually use my chocolate mmf and color that black. It doesn't take as much Wilton black as trying to color white mmf. I usually color it the night before so it has time to deepen in color. I have a bridal shower cake picture posted that is covered in black colored chocolate mmf. Hope this helps.
