Is there a variation of buttercream, such as italian meringue, or swiss buttercream, that doesn't have to be refrigerated? I am looking for something other than the traditional buttercream. I have an order for 3 full sheets and 5 1/2 sheets, so I can't fit them all in my refrigerator. I really liked the taste of the italian meringue on a cake that I had awhile back. Any help would be appreciated.

You could try the Whimsical Bakehouse house buttercream.It is light and fluffy and doesn't require refridgeration.

Here is the recipe...it's very yummy!! icon_biggrin.gif

Whimsical House Buttercream

6C confectioners' sugar
1/2 teaspoon salt
1 teaspoon vanilla extract

With a whisk attachment, add and whip at low speed:

1 cup boiling water (3/4 cup on hot days)

Whip until smooth and cool.

Add and whip until smooth:

2 3/4 cups vegetable shortening

6 ounces (1 1/2 stick) slightly chilled butter, cut into 1 inch pieces

Increase the speed to medium-high. Whip until light, fluffy, and doubled in volume (10 to 20 minutes)

The buttercream will almost fill a 5 quart mixing bowl.

Does this recipe leave the filmy stuff on the roof of your mouth like a lot of them do when using the shortening?

Yes it can but my customers really like it and insist on it instead of crusting BC.It really is a personal preference.

kdhoffert.....here is a recipe I have for Dream Whip buttercream. It's a very light and yummy whip cream type buttercream. I love it too. You might want to give it a try. I got it here a long time ago...I'm sorry that I don't remember who first posted it to give them credit.

Dream Whip Icing

2lbs or 1 kg bag of confectioners sugar
1 pkg dream whip
1/2 cup boiling water
1/2 tsp salt
2 cups Crisco shortening
2 tsp clear vanilla flavoring
1 Tbsp clear corn syrup

Whip up till fluffy. No need for refrigeration but it is fine in the fridge as well. Tastes great, not so sweet and crusts well.

At the grocery store it is usually around the jello pudding. It is a powdered whip cream topping. Dream Whip is the name brand of it...I think Kraft makes it...Am I right?? icon_confused.gif
