Wendy,

Which one of the Mississippi Mud recipes are you looking at? I make it all the time. There is a little difference in all that are listed on CC. I use marshmallow creme in mine. Will send you my recipe if you like.

This is the one I found but I would love to see yours!!!
Mississippi Mud Cake

Serves/Yields: 1-9X13 cake
Prep. Time: 20-30 min
Cook Time: 35-45 min
Category: Chocolate Cakes
Difficulty: Moderate

My mother made this cake for me years ago and I fell in love with it's rich chocolate and marshmallow taste.

1/2 cup cocoa
2 sticks butter
4 eggs (slightly beaten)
2 cups sugar
1 1/2 cups all purpose flour
Pinch of salt
1 1/2 cups chopped walnuts
1 tsp vanilla
1 package miniature marshmallows

Frosting:
1 box powdered sugar
1/3 cup cocoa
1/2 cup milk
1/2 stick softened butter not melted

Melt butter and cocoa together.
Remove from heat and stir in sugar and eggs.
Mix well.
Add flour, salt, chopped nuts and vanilla.
Mix well.
Spoon batter into a well greased pan 9X13x2
Bake at 350 degrees for 35-45 minutes or until done.
Sprinkle marshmallows on top of warm cake.
Cover with chocolate frosting.
Let cool and cut into squares.

Frosting Directions:
Combine sugar, cocoa, butter and milk.
Mix well until smooth and spread on cake.

Mine is almost the same. I use 1/3C cocoa in the cake and I don't melt the oleo with the cocoa. I just melt it and add it to the sugar and eggs and cocoa. I spread mine with marshmallow creme and then frost. My frosting calls for 2 C p. sugar, 6 T. milk, 1 stick oleo, melted, 1 t. vanilla, 1/4C cocoa and chopped nuts.

Basically the same except for the marshmallow creme. I don't like to make it because I won't leave it alone. Everytime I walk by it, I slice off a piece!

You've made me crave chocolate now. I hope you are happy............. icon_lol.gif
