For baking your cookies? I currently use my stoneware from Pampered Chef...it has always cooked my cookies evenly. BUT...of course it does not cool down between bakings, and it is pretty heavy.
Any suggestions on what to buy?
I have lots of 1/2 sheet pans from the restaurant supply store. I use parchment paper for everything. they cost about $7 each, and they are not so heavy or breakable, and they cool quickly.
Ditto on the pans from the restaurant supply store. Stainless steel, easy clean-up. I buy parchment liners for my pans there, too - 100 sheets for around $6.00. It's way less expensive than buying rolls at cake supply or grocery stores. I used to buy round liners for my cake pans - 10 for $3.00-7.00, depending on size. Now I just buy the rectangular liners and cut them down. Saved lots of money that way.

They often carry these at Costco. Ordering them by mail will add significantly to the cost. Are there no equipments stores near you?

Lisa - LOVE my pampered chef too!! But I only use the stoneware for personal baking - when doing projects for others/for sale, I'm with joann and tmriga - I use 13 x 18 ss pans with 1" sides (basically large jelly roll pans) and w/ parchment so I don't have to wash them! The cheapest place I've found them is Sams Club - they come 2 in a pack for $10!!! And they're excellent quality! Hope that helps

can anyone tell me the thickness of your stainless steel pans? How thick is the stainless steel itself? I saw up above that they are the jelly roll pans with about a 1" side was just curious how heavy the metal was. T
