First Time Stacking...need Help!!

I am doing my first stacked cake. I have it all ready to assemble. The party is not until 12:00 tomorrow and I really want to dowel it and stack it at home because I am REALLY nervous. Can I go ahead and do it now, in case I mess it up and need time to fix it?

Are you transporting it? How many layers?

Yes, I am transporting it. It is only 2 layers, a 6 and a 9, but they are pretty tall. I would really be afraid to try to assemble it so close to the party time.

you know I have this same question. If you do a cake for a wedding the next day, how long do you wait until you stack and center dowel????

the first time jitters is a killer!!! mine is coming up in two weeks

I usually stack my cakes the night before. Each layer (except for the top) should have the dowels to hold the above layer. Since you only have two layers I'd dowel the bottom one, maybe even put a small cake board on top if the top layer is really heavy and then place the top layer on. Then drive a dowel through the both layers (including the cake board in the middle.) This will make it pretty sturdy and mine have always transported well.

You need the cake board under the smaller cake to rest on the dowels, otherwise the dowels will go straight through the cake! See the instructions on this site, or at wilton.com
Drive slowly! You shoukd be OK with just two tiers.

Edited to add: Make sure your bottom cake has two boards so that it won't buckle from the weight.

I am doing a stacked cake right now for tomorrow night. It's a 14", 10" & 6" double tiers. I am putting it all together today. I always frost my tiers right on top of the next one. I don't follow the Wilton way of frosting the tier then placing it on the next one. Works for me! Helen

Thanks everybody!! I went ahead and stacked them. WHEW!!!!!!! I hope it gets a little less scarey after the first. It was actually really easy. I read in one of the posts to leave the dowels up enough to get your fingers under the cake and then let it go and let the weight of the cake push the dowels in........worked out really well. Thanks to everyone here for all the helpful posts!! I'll post my picture after I get it set up with the topper and everything. Hope my transport goes smoothly...................... thumbs_up.gif
