I have 48 cupcakes and a 8" round cake to do for this Wednesday; when should i start baking? I was thinking Sunday afternoon doing all the baking and doing the decorating on Monday and Tuesday nite ( I work fulltime outside our home) Well everything still be fresh for Wednesday?

I think so. I made my cakes for tonight and tomorrow Wed. and Thurs. so that is only one more day.. I think they will be fine. I would just store them good.

That is the time frame that I usually do my cakes and they turn out just fine. I usually freeze the cakes until I am ready to decorate and then box them and put them in the fridge.

Yes you should be fine. My teacher said that you would be able to just throw them in your freezer and not worry about wrapping them because you'll be using them so soon.

Make sure that you let your cakes fully thaw in the fridge before you frost them. Sometimes the frosting can crack and that would be sad.
