Taught My First Private Lesson!

So I taught my first private cake decorating lesson this last Saturday and have a second session with the same lady tomorrow! It went fairly well. I planned way too much for the 2 hour session though. I had her bring a baked cake and we made strawberry filling together ( her request). Then we made buttercream and assembled the cake. I showed her how to level and fill and ice the cake. Then buttercream roses. She did not get the hang of the roses. It was really hard to teach! I decorate all the time, but teaching is so much harder! My props go out to all you instructors out there!

Tomorrow I am going to teach her how to stack a cake, again her request. And then we will go over some borders and and laces. Wish me luck!

Sounds like it went well! I agree, I'm a Wilton Instructor and sometimes having to explain how to do something you do so easily, is very hard. Good luck!

I'm sure you did great. I sometimes find it easier to learn something if I watch someone else doing it.

OT - your diabetic cake, fillings and icing recipes were out of this world. I've gotten more requests for these cakes than I ever thought I would.(There are alot of diabetics in this area and they are tickled pink to be able to enjoy a cake that tastes so good now and then). I'm so glad you liked the diabetic recipes! I have been working really hard to find good diabetic recipes because my father in law is diabetic and he loves dessert. I always feel so bad when he can't have what we are eating, but just can't see making a whole seperate cake for just him. So I wanted to find recipes that everyone could enjoy together. I also have a great sugar free fruit tart recipe if you ever want it.

I would love it. The response to your cake was overwhelming. I did a cake for a family reunion and they ordered 2 cakes 1 regular (with sugar) and your diabetic cake. They said your cake was such a hit that from now on they want that one. Even "non-diabetics" loved it. One elderly man said he thought he'd never be able to enjoy chocolate again. He asked me to marry him (he's 80), what a sweetie. icon_lol.gif

Here is the Tart recipe. And a picture of the one I make, I hope you enjoy!

Sugar Free Fruit Tart

Sweet Pastry crust
1 1/2C flour
1/4C Splenda
1/8tsp salt
1/2C plus 1T unsalted butter
1 large egg, lightly beaten

Sift flour, Splenda and salt together and set aside.

Plae butter in your mixer and beat until softened. Gradually add the beaten egg, beating just until incorporated. Add flour mixture all at once and mix just unitl it forms a ball. Dough will be sticky.

Flatten dough into a disk, cover with plastic wrap, and refrigerate for 20 minutes or until firm.

On a lightly floured surface, roll out the dogh to desired size, about 1/8-inch thick that fits a 8 or 9 inch tart pan.

Place in tart pan and press down edges and flute. Prick crust with a fork to prevent the dough from puffing up as it bakes. Cover and refrigerate for 20 minutes to chill the butter and to rest the gluten.

Preheat oven to 400 degrees and place on rack in center of oven. Bake until crust is dry and lightly golden brown. Cool on wire rack before filling.

Pastry cream

1 1/4 C milk
1T vanilla extract
3 large egg yolks
1/4 C Splenda
1/8 C flour
3 T cornstarch
1/2 c heavy cream, softly whipped

In a medium-sized stainless steel bowl, mix the splenda and egg yolks together with a wodden spoon. Sift the flour and cornstarch together and then add to the egg mixture, mixing until you get a smooth paste. Set aside.

Meanwhile in a saucepan combine the milk and vanilla on medium heat until boiling. remove from heat and add slowly to the egg mixture, whisking constantly to prevent curdling. ( If you get a few pieces of egg in the mixture, pour through a strainer.)

Place the egg mixture back into a medium saucepan and cook over medium heat until boiling, whisking constantly. When it boils , whisk mixture constantly for another 30-60 seconds until it becomes very thick and it is hard to stir.

Remove from heat. Pour into a clean bowl and immediately cover the surface with plastic wrap to prevent a crust from forming. Cool. If not using right away refrigerate until needed, up to 3 days. Beat before using to get rid of any lumps. Just before using, fold in the softly whipped cream with a wooden spoon.

Fill crust with filling and top with fresh fruit( my favorite is Strawberries. Brush warmed, sieved sugar free apricot jam over the fruit. Let cool in the fridge.

I would really love to get that cake recipe too. I found out last week that I'm diabetic and so is my father-in-law. If you wouldn't mind sharing, I sure would appreciate it!

I would love to have them too - I have had several orders for diabetic items and I hate "flying by the seat of my pants" on not knowing if the recipe I am using is going to work. thank you sooo much!! I bet teaching is hard, my younger sister wanted to lean how to make a simple cake, with just stars - it was a bit hard for me to teach her but she did good. I would also like the diabetic recipies, if you would pm them to me- thanks.

Okay I just Pm'd everyone here I think. Let me know if you didn't get the email. I didn't include the icing recipe because it is on this site in the recipe section. And I know that the picture above is labeled cheesecake, but it is actually a tart that corresponds with the recipe above, it just got labeled wrong. I hope to come up with a sugar free cheescake soon too though, that is my next diabetic project!

hi! Sorry to ask now that you just finished pming everyone, but could I have the diabetic recipes, too? Hubby and I are trying to eat a diabetic diet as a preventive measure since we both have diabetes in our families.

I am a Wilton instructor and it is a hard job, expecially with the time limits. I also do private lessons. I would love your recipes also. My husband is diabetic and some of the recipes I have tried are just gross. Don't make the one from Splenda with the hazelnut chocolate. It tasted like a board. I have been baking for 30+ years and have had some sucess with the sugar-free. My DH's fav is crossiant bread pudding. I make it every year and no one knows it is sugar free. Thanks
