Has anyone ever used the carrot pineapple cake III or the baby food carrot cake. I need to make one for this weekend for a real carrot cake lover. Any suggeations on a cream cheese frosting? TIA

I think flayvrdun has made the baby food carrot cake one.
I think just about any cream cheese icing works good with carrot cake.

I have not tried that recipe, but I have one that looks like it is almost the same thing that was handed down to me from my ex-husband's grandmother. I used it in my wedding cake for the 10" tier this weekend, and it is "to die for". I had about a dozen or so requests from guests for the recipe. I used a crusting cream cheese icing with it, but any good cream cheese icing would be great! I will dig out the recipe tonight and post it (if it is different).

I love this frosting recipe:

Crusting Cream Cheese Icing
1 cup butter
1 pound cream cheese
3 1/2 pound powdered sugar
1/2 cup crisco
1 TBSP vanilla extract
1/2 tsp salt

Cream together butter, crisco, cream cheese and vanilla. Gradually add sugar and salt. Beat until smooth.

When I make carrot cake I just make the boxed kind and add walnuts and raisins and it is yummy.

I'd try the pineapple one. I think it's the same as the one I use, and my sister, who LOVES carrot cake, says it's the best she's ever had. The last time I made it, I skipped the cream cheese icing (though I've used the crusting one in the recipes many times with success) and used italian meringue buttercream instead. Wasn't sure how it would turn out, but it was *fantastic*!

Highly recommended!

i cheat and start w/ spice cake from a box

then add grated carrots (about 2-3 whole depending upon size -- and grate some using largest grating holes and do some using the smallest wholes making a carrot mush that blends into the batter to enhance the carrot flavor)

crushed pineapple, 8 oz (use the juice to replace part of the liquid called for)

raisens

and then to mine I add either chopped walnuts or pecans

very yummy

The carrot pineapple. I looked at the recipe last night and it is basically the same thing- and it is excellent! I also used the crusting cream cheese that mjones posted in this thread- it is a great recipe for decorating and tastes great too! I used it on my wedding cake (the one and only cake in my photos).

I have done flavs baby food carrot cake twice and love it with the crusting cream cheese icing!!

I keep hoping to have enough time to make one into cake balls!!! yummy
