Baking With Silicone Mats

I was wondering if anyone who uses silpat or silicone baking mats can tell me about your experiences? I was recently given some mats as a gift and there were really no instructions about modifing the oven temps or bake times. I tried to make sugar cookies tonight and after 20 minutes of baking, they were finally done - normally it would be about 8 minutes.

Does anyone else experience this? Anyone have any suggestions?

I use both Silpat and Exopat for my cookies and they are great! Whe I started using them I thought my cookies were not getting done too because the edges didn't brown but they DO cook. I bake mine for 10 minutes and then leave them on the cookie sheet to cool, where they will actually continue to bake some. When baking on the silicone mats don't look for the cookie to brown at the edges because they won't until the cookie is REALLY done.

I love my Silpat mats. I've used them for years (since I first saw them on Martha Stewarts TV show). I use them for cookies, oven baked chicken, oven fries, anything that needs to cook on a cookie sheet!

I can't live without my Silpats.. whoever gave them to you really cares about you..they are not cheap !! anyway, they are very, very good and useful. Use them to bake cookies. You can save on boxes of Parchment paper in the long run.. icon_smile.gif

After the cookies baked for 7 minutes, they were no where near cooked, so I left them in for another 10 minutes.. they were finally done for the most part, but the center of each cookie was still a little undercooked. Am I supposed to adjust the bake times or the oven temp?

I have used Silpats forever and I have never had to adjust my oven temp. I guess you will just have to experiment with them, they are awesome!

No, they just replace your foil or parchment paper. Oven temp. should be the same
