I made a lemon lime curd from a recipe in a William Sonoma cookbook as a filling for a Margarita cake. I'm going to cover the cake in fondant and don't want to refridgerate if I don't have to. Will that filling be ok, or does it have to be in the fridge??

Thanks!
Amanda

Curds need to be refrigerated, even if you make them with pasteurized egg yolks. It's just like a custard. I wouldn't risk it.
