I was thinking about trying Penny's recipe. Do you have to use unbleached flour? Is it necessary? What difference does it make?

Thanks in advance for any responses. Looking forward to trying this recipe that everyone raves about.

There are differences in nutritional values, but the performance and taste differences are very minimal. I have used both, even though I prefer unbleached.
