I am going to be making a fishing hat cake and want to use fondant to get the look of cordoury. I have made MMF but am looking for a good tasting fondant that is not as sweet. Does anyone have a good tasting (non mmf) fondant recipe? Has anyone tried the fondant recipes listed on this site - any recommendations there?

I just either use a flavoring to the wiltons fondant. I mean you can add either extracts or candy oils to make the taste you want.

Thanks Janethorp, I have Wilton fondant left from classes, and it would be easier to work with. Which do you think flavors it better, the extracts or the oils?
