My SIL asked me to do her graduation cake and she would like a sheet cake with a round cake on top. There will be between 80-100 people at the party. What size pans should I use? I want to go down to FL knowing exactly what I need to do. We get in on a Wed. night and the party is Sat. Good thing I love her!!!! Oh, how hard do you think it will be to make a fondant cap and other stuff to bring down on the plane? I mean the plane part being hard........lol. Well the cap might be hard to directions would be great!!!

I'll try to help out here. Sheet cake sizes - if your pans are 2" deep a 12"x18" will feed about 72 ppl and adding a 8" round will feed an additional 20 ppl. Now these cakes are 2 layered as well. If your using 3" deep pans - you can use the same size pans but they would only be single layer cakes. They still feed the same number of ppl. Now remember to use a heating core for the sheet cake so the middle cooks at the same rate as the rest of the cake. If you don't have a heating core - use a metal flower nail and place that upside down in the center of your pan before you put in the cake batter. This works just as good to get the middle cooked. As for the grad cap - it'll travel ok as long as your willing to hand carry it. I wouldn't put it in the luggage. I did a graduation cake that I did a cap and scroll out of fondant and attached it to the cake using lolipop sticks - see my pictures. It's the multi-green-colored stacked hexagon cake. Hope this helps you out. Good luck and keep the cake cool if you can in Florida - the heat and humidity will do a number on fondant as well as the buttercream. thumbs_up.gif
