OK, Here is the deal...I wanted to make a chocolate cake with chocolate icing that was covered in cherry flavored MMF. I made the MMF, it tastes great with the cherry. I have the chocolate cake made, also great.

My first question is, is there a SERIOUSLY chocolate icing that I can use? I have tried a couple from this site thathave been good, but more sweet than chocolate. I want a death by chocolate type frosting that will work under the fondnat. I know I have seen some VERY rich looking chocolate cakes but I don't remember the name of the person I am thinking of to PM her and ask.

My second question, how thick should I make the fondant so you can't see the chocolate frosting underneith? SHould I color it or have you put thicker MMF on a chocolate icing and it doesn't show through?

TY all in advance...me and my family have all been seriously vanilla'd out lately and I am making my final cake for course 3 this week, so I figuered I would invite the family over to celebrate the end of my classes with my final cake. I just want to make something everyone will like too.

I'm pretty new here so you should check with others first but I recently made the "chocolate syrup" icing from this site and my family loved it icon_smile.gif

Ok, this is my input:
I would use Ganache or Fudge frosting. Crumb coating is all you need for the Fondant to stick. The brown color might be seen a little bit thru the FOndant, but not much. The other day I made cake w/ Moss Green Fondant w/ dark Chocolate Icing underneath it. (it's in MY PHOTOS)..It didn't look bad.. so is you FOndant white ? how about adding a little color to it ? how about trying it out..make a cup cake or a very small cake then do what you want. see how it looks. icon_smile.gif

PERFECT IDEA. LOL> I made the cakes today and made cupcakes with the remainder. Once I find a frosting, I can frost one of the cupcakes and try it. Thanks.
