Hi, I have just discovered the world of cake decorating. I always did little things on my own but never new there was a whole big world out there ..that is until I found this site 1 week ago and I have been on here learning everyday and night since.....
I have a question about cooling cakes. I use my 3 tier cooling racks but the cake seems to stick to them. Last night I tried using parchment paper on them and they really stuck. SO what should I get for cooling cakes on that the cakes won't stick to?

Hi Kim, and welcome.
How long do you let the cakes cool in the pan before you move them to a cooling rack? You could try spraying your cooling racks with a cooking spray before you put the cakes on. I don't actually know first hand if this will work or not but I think it would.

Use paper towels on the rack. The reason the cakes stick is from steam. They shouldn't stick to the paper towels if you make sure they are cool enough on top. Just lay your hand on the tops of the cakes. If you can hold it there, they are ready to take out of the pans.
Welcome Kim! (I bet you're addicted now like the rest of us ;o) Be sure your cake is completely baked (the sides will slightly pull away from the sides of the pan and of course checking the center by using a toothpick, making sure it comes out clean). Be sure to cool your cake on a rack in the pan for at least 10 minutes before turning it out. I think a spray on your racks might work too....I haven't tried that either but I've never had a problem with a cake sticking either. Be sure your cake is completely cooled before removing it from your rack and slowly pull the rack off the cake when you turn it back over. I hope this helps!!!

I usually leave my cakes in the pan for 10 minutes. Should they stay in longer?

Welcome to a very addictive site kim.
I put parch paper on the bottom but,
I leave the cake in the pan and let it cool
in the pan. Alot of big Cake decorators do
this. I also put in the fridge or freezer after
they've cooled. I cover with a cling wrap.
Never have a problem and the cake is moist.
Mind you I don't leave in the freezer to long, maybe 3 hours then I crumb coat.
