Well I really shouldn't say dumb....guess new to me questions. I read through the book last nigh and mixed up a cake this morning. It is in the oven now but I have some questions about the mixer if you don't mind helping me out and answering them.

What beater should be used to make BC, snow white and royal frosting?

What beater for fondant or just do it by hand as usual?

Can a full batch of snow white frosting be done at one time (requires 12cps sugar)?

Is the wire wisk ever used for cakes and frostings?

I have more questions but the cake comes out in a minute so I have to run....but ANY advice you can offer is much appreciated. It works pretty neat...I was warned it would be loud but it isn't as loud as the hand mixer I killed icon_smile.gif

Congratulations on your new KA....the following has been my experiences with my KA 6qt pro:

I have made a batch of bc that required 4 cups of sugar....but thought it worked better with just the 2 cups. I have however done 3 cake mixes at one time....although 2 at a time does mix better.

I use the paddle for all bc and royal and the wire for things like meringue frosting (like tres leche frosting)

Marshmallow Fondant requires the use of the paddle AND the dough hook....look for the recipe on here, there is a link to very specific directions.

The capacity varies. I can only do a 2-pound icing batch in my small KA....up to six pounds in my Professional 600. I believe KA makes 3 different size bowls...just depends on which size you've got a to how much you can do.

I also use the paddle for pretty much everything. The only thing I use the wire for is royal and whipped buttercream (and whipping cream, of course.) I still make my MMF by hand, even though I've got the largest KA they make. I put the full 2 pounds of sugar on a vinyl sheet on the counter and pour the melted MM into that and just start bringing the sugar in to the middle. It is just so easy....the vinyl sheet is a lot easier to clean than a bowl and beaters, IMHO.
