Hi,

I often use a non dairy frosting called Frostin' Pride, which I buy at Smart and Final in the frozen desserts section. It is very easy to use and will hold up very well under the conditions you describe. It is easy to tint and decorate with, also. Just make sure you chill your beater and bowl before you whip the frosting, then ship it just like you would regular whipped cream. It comes in quart containers that look like milk cartons and I find that if I allow one box of frosting per layer on a tiered cake I have enough for the cake and decorations. Cost here is about $3.50 per carton, but I live in a small town and prices tend to get elevated here. Good luck!!

This is just a thought but is it possible to leave a whipped cream frosting cake out that long without it being refridgerated?

I use whipped cream frosting all of the time. I keep the cake refrigerated right up until it is time for pick up or delivery. I never had a problem! If you would like me to email you my recipe, just let me know!
