I am so nervous about this. Nervous about the fact that I might be doing this all the wrong way (if there is such a thing as a wrong way). I have been seriously decorating cakes for about 2 months now and am itching to start doing it more seriously and seriously charging for it. My final goal? Wedding cakes. I was wondering about your process....I am having the hardest time right now picking THE recipes for my cakes. I was thinking of holding a cake tasting for my friends after classes end so that we can have a fun debate over cakes and cake flavors and get an idea of what people like or don't like. I did a freestyle sample this week for a wedding cake and I realized that I really truly want to have a better idea of the actual cakes I present before doing anything else. Now my worry is that I will have to do this for every single cake flavor I choose before jumping into business (maybe I can do weekly tastings....have 2 or 3 flavors of say lemon, vanilla, etc. etc. each week?) Ok this is all very confusing. Thanks for the help!

I can't really answer your question since I just started decorating cakes myself this year. I have however been a baker for years, and I have sold my baked goods, just not cakes until recently. I have not done a wedding cake yet, but hope to someday! As for my recipes, I have just aquired them along the way. I have never held a formal tasting, but I can assure you that my friends and family have had thier share of practice cakes. I would suggest trying to find recipes for the basics, white cake , chocolate cake, yellow cake. You can begin by offering these and then as you find new flavors and recipes add those in later.

Maybe a more experienced wedding cake decorator could give you better advice though. I would love to hear the answers you get!
