Cake Baking Oven Recommendations

Interested in purchasing an oven to bake my cakes. I am using a commercial kitchen and they really need a good cake oven. Any suggestions? What is the best brand? Suggestions for finding a used oven? Thanks, Lori V.

I have always used a consumer double oven. The one I have can handle a cake as large as the 18" 1/2 round pan.

My mom did cakes for over 30 years before she went to the "Big Bakery in the sky" She had a couple of different shops and always used the consumer GE double ovens. I still have one that she had in her last shop & it is working great!

It has to be a commericial oven or the Health Department wont approve it.

I've heard good things about the Deluxe ovens which were specifically designed for cakes after talking to cake decorators at ICES. I've talked to Russ, a vice president at Deluxe about them. http://www.deluxeovens.com

This is what I'd get if I was getting an oven. Russ says he has a letter from the California Department of Health saying the ovens don't need to be vented.

Itsacake....Thanks for the info on the DeLuxe Ovens. I have gone on their website and there are so many different ovens. Did he mention which was best for cakes? Convection, Standard .....? Lori V.

Never had any problems with a consumer double oven not passing MO guidelines for a commercial kitchen. It has been several years ago for my mom but there is a bakery in town that has a consumer double oven - I don't know if she had to do anything special to get it approved.

lisascakes, California has very strict regulations. I was also told that the Califonria Department of Health will not approve a consumer oven in a commercial establishment and that if you don't have/use a commercial kitchen, you can't sell prepared, including baked, food. In fact, I was told that a business elling WATER, or one that just wants to buy hi-ratio shortening in bulk or chocolate buttons in bulk and divide them into into smaller packages has to have most of the things a full kitchen has to have. California is not supportive of small food businesses.

Vreeke, Russ said that the Convecta-ray ovens are the best for cakes. They are not exactly convection ovens. They are made with a heat source above and below each rack so that the heat is very even to promote even baking. Call him and talk to him. I blieve that Mrsfish94 bought an oven from him and tawnyachilders bought one used on ebay. They might also have advice for you. BTW, are you going to cake camp? Didn't I see an article about you in Batter Chatter a while back?

You are absolutely right on all counts. I use a licensed kitchen nearby to bake my cakes but they only have one small Hobart oven/stove. I am looking into investing in a good cake oven for the licensed kitchen.
Yes, I am going to cake camp and also to the ICES convention. How about you? Vreeke

Its aCake - Thank you so much - It is amazing how different the laws & regulations are between counties & even states.

I hope you all have a wonderful time at the ICES convention. Several years ago when my mom was still alive Betty Crocker asked us to do several 1/2 sheet cakes for them with their mixes & frosting. This was the time the convention was in KC. That was sure a lot of fun. They sent us over several cases of mixes & frosting and then paid us to make them for them. I'm not sure how Betty Crocker got her name for that.
