Mmf Or Buttercream??

I've been asked to do a wedding cake on July 16th. The problem is it's an outside reception and this is only my 2nd wedding cake. I have yet to meet with the bride to discuss what all she is wanting. I have told her mother that I would prefer not doing a tiered cake (on on top of the other) for fear it will crash in that kind of heat. They were fine with that. I will probably be doing the tall-tiered one.(that has the center rod). My question is...Which icing should I recommend to them the marshmellow fondant or buttercream? Which one holds up better in heat? Thanks for any suggestions and if anyone has any suggestions on surviving an outdoor reception I would GREATLY appreciate it. (I will also be serving punch, coffee, nuts and homemade mints.)

I think either one will be fine outside. If using buttercream, i would recommend not using any butter or very little and put some meringue powder it in to keep the icing from breaking down. Otherwise you will be fine, just no filling that needs any type of refrideration.

I would recommend mmf so that the buttercream does not melt off your cake. I think your recommendation for the tall tier stand is a good one. I have used it before and I really enjoyed using it. I've used it once for a cake, and another time to put appetizers on it for a bridal shower to save on countertop space (the shower was at my house).

I would deffinately go with the MMf. It's usually over 90 here in july, and BC would go sliding right off the cake. It depends on where you live. You can always put BC under the fondant so you get the best of both worlds.

I never have had problems with buttercream and heat I do use 1/2 margarine and 1/2 crisco Now chocolate grooms cake is a different problem With any cake the problem is wandering dogs and flying bugs a tent made of netting can help with bugs and can look very pretty
