I don't do many wedding cakes and those that I do are sour cream pound cakes because of their strength. I was at a wedding this weekend and tasted a downright delicious cake. It was a lighter cake, yet tasted very much like a scratch cake. So, my question is, what is your favorite cake base for wedding cakes? I know everyone fills with a myriad of flavors but I am interested in which cake recipe is most popular!
People are pretty simple around here where I live so I only use duncan hines classic white cake mix's.
I know a lot of other people use lots of different things, I hope you get some ideas of what to try!
I don't do wedding cakes really, mostly party cakes. I try to make all my cakes from scratch, but it's hard because with all the cakes I've made I've found about 4 recipes that are awesome and the rest were thrown in the trash.
I use box mixes except for special requests or carrot cake. I find they are more moist. I use betty crocker or duncan heinz. HTH
Box mixes...enhanced with extra eggs and oil. I use fillings whenever the customer allows. I think it sets a cake apart from the norm. Plus....it's fun to have a variety of flavors. Duncan Hines. I also use real butter in my buttercream icing. Way improves the flavor.
