I've made ganache before & it turned out fine both times but now I tried to make white chocolate ganache following The Cake Bible instructions & I have a bowl of cottage cheese looking stuff!! What did I do wrong?? Can I fix this?? I've put it in the fridge for now & all I can think is that once it hardens more I can remelt & rebeat it.... does anyone know if this will help?! icon_cry.gif

Yes you can save it. Once it is cool, you can start over by warming it slowly in a double boiler (barely simmering water) Whisk gently as it remelts. It should recover just fine.
