If you do a search for buttercream frosting and pick one that doesn't have flour or meringue powder, it probably won't crust. Sorry I'm not much more help, so far I've only tried one of the frosting recipes that I've found on this site, it was delicious, but didn't turn out quite right. I'm sure it was user error.LOL

Hi! I always use Tami's Perfect Buttercream from the Baking 911 website. It's delicious and doesn't crust. I think the ones that crust are usually made with only shortening or mainly shortening, but I personally don't like the taste or texture of an all or mostly shortening buttercream. I love this one, and it also uses heavy cream instead of milk or water and I think that adds to the creaminess. That also may help prevent it from crusting. I've left cakes with this buttercream out for up to 2 days with no problem - I've read that the sugar prevents bacteria growth so I've never had a problem with anyone getting sick or it going back, but I'd keep it refrigerated if you could, just to be sure.

Good luck!
