What would be the best way to try to recreate this? It doesn't necessarily have to be 3D. I will also only be using the bird not the gator. What do you guys think? I need to do something with the rivalry theme for a grooms cake in about 3 weeks!

If it doesn't have to be 3-d, I'd suggest an fbct.

If you didn't want to do a fbct could you mold them out of fondant??? I've never used gumpaste before, but I would think you could use that as well (double check, not totally sure)
