What are you trying to make? Sometimes you can make decorations out of melted white or dark chocolate and that is more sturdy in some cases.

You can use spray oil like you would do to spray your pans for cooking...that helps. Or a bit of cornstarch... or someone even told me about roul'pat silicone mats you can roll fondant on and it won't stick.

What kind of fondant are you using?

Oh I have never made my own fondant...

Can you try putting less sugar in it? Is it dry and breaking, or two wet and breaking?

You can use a little tiny bit of oil to keep it from sticking.

I've had mine break when it is too dry (too much sugar). I have not worked with glucose and glycerine so I don't know if it will work, but try to add some water (by the tablespoon) and knead it and see if it stops breaking. Also, roll the fondant onto a lightly oiled or greased surface NOT on to cornstarch or sugar which will dry it out.

Don't worry about your english! It's better than my french...and I studied french for 6 years!!!

doudoun--
Can you get 10 gauge vinyl sheet at a fabric store? It works perfectly to roll fondant on and doesn't stick. Don't have to use anything on it and it will not absorb any moisture from the fondant. Plus it helps to lift rolled fondant and put over the cake without tearing.
