Fruit On Top Of Cakes

I am planning on doing a wedding cake in May with different fruits on top of each cake. How long can fruit last on top of a cake? Also, I would like to mix some green leaves in with this also, what kind is good to use?

If you are talking fresh whole fruite, it will not not last long on the cake. but it depends on what fruit you are considering. Is it whole, sugar glazed, candied dried? If you use dried, candied or chocolate dipped fruits, they will last a long time. Cut berries, only a very short time.

If you are adding fruit indended to be edible, the leaves should be "food safe" as well. Kafir lime leaves are good. You could use silk or gumpaste too, depending on the fruit.

mint leaves also look really nice if your fruit is on the smaller side....like strawberries, etc.

I've done a several cakes with fresh fruit on top. I usually stick with grapes and strawberries. I make sure to rinse and dry the with a paper towel. On the groom's cakes I've done I usually add the fruit as the last part of setup at the reception site. I prefer to use whole fruit as it holds up better. The fruit has managed to hold up thru the reception. I've also done a few cakes with lemon wedges and sliced strawberries in which I sugared them. As for leaves wafer paper could be an option as well.
