I'm not sure about Hi Ratio shortning, but i use a white food color I got it here on CC. It seems to take about 8 drops. Good Luck

I got powdered white food coloring at my cake supplier. It's cheaper and stronger. It's nothing in the world but titanium dioxide...as are all the white colors and "whiteners." It's just a question of how much they cut it with whatever carrier they're using. The powder seems stronger to me. I use it in lots of my frostings and love the way it instantly makes things whiter and brighter.

Are you trying to get bright white frosting using shortening?

If so, don't use a recipe that calls for butter or butter flavored shortening and use only clear extracts/flavorings.

Wilton has a product called, "White-White" that you can add to frosting to make it whiter.

Thanks Everyone for your responses. To make the buttercream frosting using shortening in addition I put in a cup of bright white that I get at the cake dec. store. So I am wanting to know how to make that.

If you have a Wilton Yearbook, look for the Snow White Buttercream Frosting recipe.

The recipe here on CC for Dreamy Cream makes a white frosting (use only clear extracts).

You will not need to add a whole cup of Wilton's White-White, only a few drops - the bottle gives directions.

1 pound white margarine

1 pound sweetex
2 lbs. confectioners sugar, sifted
1 tbsp. clear vanilla extract
1/2 cup water 

  1. Mix margarine and sweetext on medium/medium-high for 5 minutes. scrape down bowl.
  2. With mixer on low, slowly add all the confectioners sugar until all of it is incorporated
  3. scrape down sides of bowl, add vanilla and water, mix until combined. 

this makes a very bright white buttercream that takes colors very well,  including red, black and other dark colors. Taste is not too sweet, almost like whipped frosting and is very light.

I also read on here on here how a tiny smidgen of violet counter acts the yellow and adds brightness. Like the smallest tip of a toothpick micro dot, not any other portion.
