Cupcake Papers Falling Off

I did 12 dozen cupcakes the other night, and about 10 of them lost their papers after they cool. No, they didn't have double papers on them. I am just baffled as to why this happens to only a few, and not more.

I hate having to bake extras just to be sure I have enough with papers.

Does anyone have any ideas as to why this happens, and/or suggestions to make it stop?!?

Please help...

That's weird that it happens to you so often. I have it happen to maybe one now and then and I can't say what makes this happen. What I do though is just pipe a dab or tow of icing between the liner and the cupcake and press it to adhere icon_smile.gif Good luck!

Did you cool them IN the muffin pans or out of them?

Not sure how to fix it, but maybe it's b/c the muffins shrink when they cool, so they pull away from the papers?

I cool them out of the pans...in fact as soon as they come out, I dump them out, and start on the next patch. Could this be it?

I can't tell you why it happens, but it happens to me, too.

I never bake in tins, I just use the aluminum papers on a cookie sheet. I happens to some of the cupcakes but not all.

I'm glad it's not just me icon_confused.gif

The only time this happens to me is when I use the aluminum foil liners. When I use paper, they really stick to the cake. In fact, when they're peeled off, they take a thin layer of crumbs with them.

I use only the paper liners...never have tried the foil liners.

Its happened to me, too. With the papers, and sometimes it only does it on a portion of that particular batch. Its happened to me when they're cooled in or out of the pan. I have no idea why it happens, but I hate it! I can't blame it on the recipe, because when it happens, half of them has the paper stay on, and half of the paper peels of... Although I do notice it more frequently when I make lemon cupcakes. I dont know... I'm rambling... Its done it with all kinds of flavors... hehehe icon_biggrin.gif

This is really weird to me! I feel bad that it happens to some people. I haven't had it happen to me (yet!) but I'd really like to know why this occurs if anyone knows!

I'm determined to make a cupcake rose bouquet for my wife's birthday tomorrow. Yesterday I made 5 dozen mini cupcakes with white papers. I used a store-bought cake mix. It was an 'ultra-moist' yellow cake mix.  I took each batch out of the oven, let them cool in the aluminum pan for 5 minutes, then carefully lifted each one out and placed it on a cooling rack.  After the third batch, I noticed that some of the first batch papers had begun to pull away from the cupcakes. I thought that if it only happened to a few of them it would be okay, after all, I had plenty. I let all the cupcakes cool for 3 hours or so on the cooling rack. In an effort to hide them from my wife, I put them into a large resealable plastic storage casserole container.

I just opened the container and virtually every single paper has pulled away from the sides of my mini cupcakes. :sad:

 

What I surmise is that the fat content of the recipe is too high for the papers to stick properly to the cake.  Beyond the oil in the dry mix, it asked for 2/3 cup of butter. I think the 'ultra-moist' wasn't a good choice.

I'll keep you posted if the oil content theory works out. Maybe it's the water content? I'll see...
