Mocha Bc Filling

Hi there! I'm making my first *paid* cake for a bridal shower in a couple of weeks! Yay!
Anyways....the order is for a chocolate cake with mocha filling. The bride is very picky and doesn't like any kind of filling besides flavored BC frosting. So I was thinking that to make it mocha I would add a little cocoa powder to the powdered sugar and for the liquid I would use fresh espresso.

Do you think that would turn out well? Have any of you tried something else that you like?

I welcome any kind of suggestion or tip that you might have!

Here is what I do:

1/2 cup shortening
1/2 cup butter
2 tablespoons instant coffee granules
1 tablespoon cocoa powder
1/2 cup milk
1 1/2 teaspoon vanilla extract
5 cups confectioners' sugar

In large bowl, cream shortening and butter with electric mixer until light and fluffy. Combine coffee granules, cocoa powder, milk and vanilla; add to butter mixture and beat well. Gradually add sugar, one cup at a time, beating well on medium speed. Scrape sides and bottom of bowl often. Continue beat at high speed until light and fluffy, about 7 minutes.

thanks for the suggestion. I think the bride wants a BC consistancy and not a fluffy one though. When I say she's picky....I mean extremely picky!!

Any more suggestions out there?

Hi There!

For the mocha buttercream that I make, I take a chocolate buttercream (light chocolate) and add some strong instant coffee. Just a little at a time. Taste it yourself for the flavor that you like. I just dissolve some instant coffee about 1-2 tsp in about 1-1/2 tbsp boiling water. Mix and taste. Hope this works for you.

I would use instant espresso powder rather than instant coffee. It gives a deeper flavor.

What do you all think of adding a little of the mocha flavored ice cream topping to regular BC to flavor it? I am thinking of trying it out, but was wondering if anyone already had.

I just mixed it up and it was fabulous!!! icon_biggrin.gif I am glad because it saved me from having to leave the house and seek out espresso powder, too! icon_lol.gif Just wanted to let you all know that it tastes great and was so easy make!!

Mocha topping? I don't think I've seen that before.

I mixed some mocha bc up this weekend and it turned out really really good. I think this is a new favorite filling!

I made up my regular 1/2 butter 1/2 crisco bc, added some cocoa powder, a touch of vanilla, a couple squirts of hershey's special dark chocolate syrup and a few tablespoons of fresh espresso (cooled down first, not hot). It was fabulous!

For my chocolate frosting, I usually add about a tablespoon of strong coffee. It gives the frosting an added layer of flavor and cuts some the sweetness. All my chocoholics really like it!!

Let's see, I did a mocha filling a few weeks ago, and now I'm trying to remember how I made it!!! I made my normal chocolate buttercream and then I think for the liquid I made some strong coffee with hot milk, but then I added some of the International Coffees in hazelnut. It was soooo delish!!!! I combined it with chocolate cake too, and I had rave reviews!

Hi everyone. The topping I used was a Smucker's brand called Chocolate Mocha. It cost about $1.20 for the bottle. It was in the ice cream cone section. I was surprised when I found it, too! But the taste was great!!!

Here is the recipe in the Ultimate Southern Living cookbook:

1 T instant coffee granules
1/4 cup hot water
1/2 cup butter
3 T cocoa
4 1/4 - 4 1/2 cups powdered sugar
3/4 t. vanilla

dissolve coffee granules in hot water, set aside.
beat butter and coca at medium speed until creamy.
Gradually add powdered sugar to butter mixture, alterntating the coffee mixture, beginning and ending with sugar. Beat at low speed after each addition. Beat until spreading consistency. Add vanilla. Yield 2 1/3 cups.

I haven't tried it, but there's another option! Hope it helps! icon_smile.gif
