Confused About Cream Cheese Frosting... Help!

Ok, i was told on here about a great cream cheese recipe that crusts,and i found it, but i also saw another thread about them using the same recipe and they refigerated it and the next day the frosting cracked really bad or something along those lines. So now im scared to death to use it, b/c i really dont want to mess the entire thing up when i refrigerate it. What is your guys experiences with this recipe if you have tryed it, ALSO, why cant i just put some meringe pwdr in a regular CC frosting recipe? thanks so much!!!

This is the crusting cream cheese icing, Im wondering if there is some reason why you can just add meringe powder to a regular recipe, Im afraid of using this one, as i mentioned above.



Crusting Cream Cheese Icing

1 cup butter, softened
1/2 cup solid vegetable shortening
1 pound cream cheese, softened
1 tablespoon clear vanilla extract
3 1/2 pounds sifted confectioner's sugar
1/2 teaspoon salt

Cream butter, shortening, cream cheese and extracts. Gradually add confectioner's sugar and salt. Beat on low speed until nice and creamy. If you want whiter icing, try to use butter without dyes available at most health food stores.

Just curious....why would you want to add meringue powder to this icing?

I wanted to make my borders and roses with the cream cheese frosting too, so id like a recipe that will crust, i dont want droopy roses.

Oh, ok. I wasn't aware that meringue powder can be used to aid in crusting. Learn something new every day. icon_biggrin.gif
