I am looking to simulate a lemon creme filling, it was like a pudding consistency, but BETTER! My friend had it in her cake, and the baker had called it a lemon merinque cake. I want to re-create that filling...any tips?

That is what i have...but it was more like that mixed with something else to give it a creamy taste...it was not as bright, gel, yellow...more like pudding but BETTER.
I make a lemon cake - and I use the lemon merignue pie filling mixed with cool whip - tones down the sharp lemon and everyone loves it. I bake a 2 layer lemon cake, then use about 1/3 to 1/2 of the can of lemon pie filling between the layers - mix the remainder with the cool whip to ice the top and sides with. Super easy cake, and very good!

I wonder if you could make it like a vanilla pudding/pie filling and use lemon extract instead of the vanilla???? That is if you want to cook it, quadcrew's suggestion sounds yummy and alot easier.
Try mixing a box of lemon pudding/pie filling (jello 3oz box) whipped up in 1 cup of heavy whipping cream.
For my sister's wedding cake, she used the lemon pie filling and mixed in a little bit of her buttercream to cut the sharp lemon taste. It was nice. It had a creamy look to it and a mild lemon taste.
