Hello everyone:

I have a groom's cake coming up and would like to attempt to make the groom's initials out of chocolate to place on top. Can someone advise me on the best way to do this. I have never attempted to do this and am a little nervous. Any help, tips, instructions would be most appreciated.

Thank you,

this is a liitle tricky. I am doing this for a May wedding. The first pactice one I made, looked beautiful, monogram piped out of chocolate, several layers to make it thick, sat on the cake for about 5 minutes and the fell and is in pieces behind my buffet. I am now going to make a square base to set the monogram on, and after this sets up put it on the cake.

If anyone have any other ideas, maybe candy sticks or something, I would love the advice also.

you can buy molds!!! Other than that......I would definitely try to go the candy sticks method....you'll need something to help you anchor it.....I make them out of royal icing all the time...sometimes whole names on top of a cake and all I do is pipe some of the royal in the shape of a stick on the bottom in several different places on the name ...and I do several layers like you said for added strength and then when it hardens you use the royal that's sticking down to stick into the cake and it holds the name up nicely....I use the royal, because I like everything to be edible....but I don't see why you can't use the candy sticks or even skewers that would be nice and long to anchor a chocolate monogram....I'm sure they'll be removing it from the cake anyhow.

i think using the sticks would be easier to transport than making something that is standing up and you have to get it to the reception.
