Sticking The Cookie

I tried to do a babyshower bouquet this weekend but I tried to put the stick in before but I could see the stick from both sides. It was like the cookie was rolled to thin but when I baked it then put the stick in it, it cracked all over..ERRRR.....I just want to make one cookie bouquet icon_cry.gif ..Oh and get this, the babyshower cookies I spent all day saturday freezing, the mother to be doesn't want them now and she doesn't want me doing her cake. But I am glad I don't have to with exam for school coming up and buying a new house. I'm just upset because I baed all the cookies already.

To stick cookies, you need to do it immediately when they come out of the oven, before they cool. It's tricky to do. I only cook a few at a time and I flip my jelly roll pans over and line with parchment paper. Place cookies only around the edges with teh edge that you want to stick the stick in facing out. As soon as they are removed from the oven have your sticks ready and work quickly. Stick the cookies and let cool on pan. When they cool the cookie will contract around the stick and hold it in nice and tight! Good luck and make sure to make extra dough as you will have some breakage.

I'm the opposite. I put the sticks in before I bake. I roll my cookies a little more than 1/4" thick (sometimes almost 1/3"), freeze them, put the sticks in, freeze them a little more and then bake. The reason I do it before is in case the stick shows in the back, I patch it with some more cookie dough. Works well this way. Made some Nemo cookies on a stick. Turned out pretty cute, but forgot to take a picture.

Sounds like the cookie was too thin.

Here are two mini how-tos I did a couple of weeks ago. One shows how to use regular household items to roll out cookies to a uniform thickness. The other shows how to Make a cookie template, insert the stick prior to baking and fix it if necessary.

I never insert my sticks after baking, I am too scared to risk breaking my cookies and too chicken to worry about getting my hands burnt.
