icon_smile.gificon_smile.gif Hello everyone!! I was hoping somebody could tell me how to make chocolate mousse filling? I'm not a big chocolate fanatic, but a friend wants a chocolate cake with chocolate filling! Help please!?

I use instant chocolate pudding, but instead of adding all milk I use 1/2 milk and 1/2 whipping cream. Tastes like mousse and you don't have to mess with all those eggs in a regular mousse. I stick it in the fridge for 5 - 10 minutes before using and it sets up perfectly.

Chocolate Mousse

1 cup milk chocolate chips
1 1/2 cups heavy whipping cream, divided
1/4 cup powdered sugar
1 teaspoon vanilla extract

Microwave chocolate chips and 1/2 cup cream in uncovered, microwave safe bowlfor 1 minute. Stir. If necessary, microwave at additional 10- to 15 - second intervals, stirring just until melted; cool completely. Beat remaining cream, powdered sugar and vanilla extract in small mixer bowl until stiff peaks form. Fold cooled melted chocolate mixture into whipped cream. Refrigerate. Makes 2 1/3 cups.
