Dumb question of the day: How do you do cornelli lace on the side of a cake without it falling off? icon_confused.gif Do you tilt the cake?

I've never had a problem with it wanting to fall...just do it like you would the top of a cake. As long as you have your tip close to the cake, you shuoldn't have a problem.

Good Luck!

I did a wedding cake in January that had a lot of cornelli lace on and never had a problem. We didn't have to tilt the cake or anything. Are you doing the cornelli lace in buttercream, like the rest of the cake? Then it will adhere just fine. If you were doing it in royal for some reason, maybe it wouldn't, I don't know, but there's really no need to do in in royal.
Good luck!

Also, make sure your icing isn't, too thick. I've had really stiff icing before and it won't adhere to the cake right if I try and do cornelli. I always thin my icing out a bit and work as quickly as you can. Good Luck with your cake! icon_smile.gif

try adding a little piping gel or corn syrup to your icing that you're doing the cornelli lace in...I find it pipes smoother and adheres a LOT better.

I used buttercream on my cornelli lace wedding cake and had no problems at all. Just work really close to the cake. Good luck! thumbs_up.gif

My problem was having the icing too thin and it just dribbled all over the place. Everyone at work thought it was fabulous but I knew that I blew it and need to practice more.

also a good thing to try is to make sure that the lines are somewhat close so if you make a boo boo, it will not be noticeable.
