I'm baking a 9" cake with 2 layers and realize already that I'm going to have to make another cake mix so I can make my cake 3 layers. My question is..how does everyone get their cakes to be so tall using cake mixes? Do you put a ton of filling in it?

well, for starters if you are using two 9 inch pans you really need another 1/2 a mix at least to get two-2inch layers. So i guess to answer your question you just use more mix.
I also, torte each cake, so i end up with 3 layers of filling and 4 layers of cake. I use a thin 1/4 inch (no more then) of filling.
If I need extra height I always split my 2 layers in half and fill those, so you end up with 4 layers of cake and 3 layers of filling, you can easily get 6in height like that!
I fill my pans up 2/3 full. There's an article on here about collaring your pans to bake a higher cake.

Thanks for all of the useful information. I am going to try the collaring technique when I make the second cake mix. I'll make one 9" layer and collar a 6" pan to use up the rest of the batter.

I torte and fill my layer cakes like everyone else suggested. It took me a few crumbled cakes to figure out how to cut them right. Good luck!
I collared the 6" pan and it came out nice and high. Took forever and a day to bake!! After torting and filling it, I think it may be fine as the top tier of a practice cake I'm working on.

Also, if you add one or two tbls of meringe powder to your mix it makes the cakes taller. My instructor taught me that in class. You can fill the pans "a bit" higher and add the powder and rather than overflowing then grow taller. Hope this helps. S
The meringue powder sounds like a very interesting tip. I'll try that one next time. I finished the cake (posted in my photos) and am pretty happy with the results. I was able to cut the 6" in 3 layers; the finished height was perfect.
