Freezing Royal Icing

Hi all you Cookie experts. You have probably been asked this a million times, but can I freeze my cookies after they have been frosted with royal icing? and for how long? Thanks in advance.

I'm no expert but I wouldn't advise it....you don't want condensation on the cookies especially if you have used more than a plain colored coating on them.

From a previous post about the same thing...

This topic was discussed earlier and on www.kitchencrafts.com this bit of info was found...

"You can freeze un-iced cookies or cookies iced with royal icing. Make sure your cookies are stored in an air tight container. When removing them from the freezer DO NOT open the container until the cookies are back up to room temperature. This will prevent condensation on the cookies.
How long? This depends on your thoughts on how long you like to leave things in the freezer. Stored in an airtight container I'd say up to a month. If your life is so busy that you need to make the cookies more in advance than that you definitely need to slow down a bit." ...

Freezing works fine for cookies with royal. If you have lots of bright color, you can get some bleeding. however, if the colors are light, the condensation will evaporate, no problem.

If they have lots of decoration, lay the frozen cookies out in a single layer to defrost until the condensation is gone. Just like new!
