How do you charge for sugarpaste flowers? by the flower or by the bouquet?
Do you charge for some flowers more than for others? or do they come included with the prize by portion of cake?

it depends on how you want to do it. If they want a floral spray than I charge for the spray. If the flowers are time consuming and intricate than I charge by the flower.

I charge $1 a flower for RI flowers and basic gum paste and fondant flowers like ribbon roses and simple cut outs. I charge up to $3 a flower for more detailed gum paste flowers, like roses. Sometimes I will charge a flat rate for the whole cake, but that will vary.

I charge $18 an hour for "extra" decoration work. So you just need to know how long it takes you to make various flowers.

I'm off the subject but this morning I was working with Gum Paste and it cracks. What am I doing wrong?

Do you mean when you roll it?
you can freshen gum paste with a little bit of fondant if its too hard. kneed the two together.

No, it is when I was trying to make things with it.

I was making a coffee scoop and a spoon, I finally got them looking so so. But, forget it when I tried to make coffee cups.
