Help! First Wedding/fondant Accents

My first wedding is coming up on May 5. I'm going square stacked caked, choc. buttercream, fondant bow and ribbon and balls of fondant (turquoise/tiffany blue for all the fondant) and then luster dust on that. How far ahead should I make the balls? And the grooms cake is a ball and chain all in fondant. I thought about making the links/cuff and balls next week as that's my only slow time right now. Also, I think I'll bake the cakes, crumb coat and freeze. I've never done this before, but man, that week is crazy busy for me!
Any advice would be appreciated!

you can do the fondant work as far ahead as you want. No one is going to eat dried fondant decorations (if they do they are out of their minds and will probably lose a few teeth LOL).
